Jellied Vegetables In Tomato Cases
Ingredients
6 tomatoes, medium-sized, firm, red
1 Tbsp. gelatin
1/4 C. cold water
1/4 C. mild vinegar
1 C. boiling water
1 Tbsp. lemon juice
1/4 C. sugar (or sugar substitute)
1/2 tsp. salt
1-1/2 C. vegetables
Cooking Instructions
Hollow out 6 tomatoes, and place in refrigerator to chill. Soak gelatin in cold water, and dissolve in boiling water. Add vinegar, lemon juice, sugar and salt, and chill. When mixture begins to thicken, add 1-1/2 C. of any leftover vegetables, cut in small cubes, and fill tomato cases. Replace in refrigerator until firm. Serve on a bed of lettuce, or as desired.
