Cranberry Sweet Potatoes
Ingredients
6 sweet potatoes
1/2 C. frozen orange juice concentrate
2 C. cranberries, fresh or frozen
Equal sweetener, to taste (optional)
Cooking Instructions
Bake sweet potatoes at 400 degrees F. for about 40 minutes, or until soft. Combine orange juice concentrate and cranberries in a saucepan. Bring to a boil. Lower heat and simmer until cranberries pop and sauce thicken. Add sweetener, if desired. Cut tops of sweet potatoes open; press open from the bottom. Top each with cranberry orange sauce.
