Zucchini Cake
Ingredients
3 C. zucchini, unpeeled and grated
3 eggs
2 C. sugar
3 C. flour
1 tsp. salt
1 tsp. soda
1 tsp. baking powder
1 1/2 C. coconut and pecans
1 C. oil
2 tsp. vanilla
1 tsp. cinnamon
Icing:
8 ounces cream cheese
1 stick of margarine
1 tsp. vanilla
1 box of powdered sugar
Cooking Instructions
Mix well. Put in a greased 11 x 13 inch pan and bake at 325 degrees for 1 hour. Icing: Put all the ingredients for icing in a bowl and beat together. Spread it on top and sides of the cake
