Yorkshire Parkin Cake
Ingredients
3/4 pound oatmeal
1/4 pound plain flour
1 pound black treacle (molasses)
1/2 pound brown sugar
1 tsp. ground ginger
1/2 tsp. mixed spice (nutmeg, cinnamon, allspice, etc)
2 tsp. bicarbonate of soda
2 Tbsp. lukewarm water
Cooking Instructions
Gently melt the treacle together with the butter. Mix the oatmeal, sugar, spices with the treacle and butter. Dissolve the bicarbonate of soda with the water and mix that in well. Put batter well greased and floured shallow baking tins and bake for about 20 minutes in a hot oven.
