Vegetable Soup
Ingredients
3 slices bacon, chopped
1 C. chopped celery
1/4 C. chopped onion
2 C. 1/2″ potato cubes
1 C. thinly sliced carrots
1/4 C. water
3 Tbsp. all-purpose flour
3 C. vegetable juice cocktail
2 C. water
1 pkg. (10 oz.) frozen green peas
1 tsp. salt
1/4 tsp. pepper
Cooking Instructions
1. Combine bacon, celery and onion in 5 quart casserole. Microwave at high (100%) until bacon is crisp and vegetables tender, 4-6 servings. 2. Add potatoes, carrots and 1/4 cup water; cover. Microwave at high (100%) until potatoes are tender, 12-15 minutes, stirring after half the cooking time. 3. Blend in flour. Stir in vegetable juice, 2 cups water, the green peas, salt and pepper. Cover. Microwave at high (100%) until soup is slightly thickened and peas are heated through, 8-10 minutes. If using oven other than Sharp Carousel, stir after half the cooking time. Makes 8 servings.
