West Virginia Black Walnut Cake
Ingredients
4 C. coarsely chopped apples
2 C. sugar
2 eggs
1/2 C. vegetable oil
2 tsp. vanilla
2 C. sifted all-purpose flour
2 tsp. baking soda
2 tsp. cinnamon with 1 tsp. salt
1 C. chopped black walnuts
Lemon Butter Frosting:
4 Tbsp. softened butter
3 C. confectioner’s sugar
2 Tbsp. lemon juice
2 Tbsp. cold water
Cooking Instructions
Preheat oven to 350 degrees. Grease and flour a 9 x 13 x 2-inch oblong pan. In a mixing bowl, combine apples and sugar and let stand for approximately 1 hour. In a separate bowl, beat eggs slightly, then add oil and vanilla; set aside. In a large mixing bowl, combine sifted flour, baking soda, cinnamon, and salt; stir into egg mixture alternately with apple-sugar mixture. Stir in walnuts. Pour into pan and bake for 1 hour (or until cake tests done). Let stand in pan until quite cool; turn out on rack to complete cooling. Frost with Lemon Butter Frosting, decorate with black walnuts. Lemon Butter Frosting: In a mixing bowl, cream butter and add sugar gradually, creaming thoroughly. Beat in lemon juice and enough cold water to make a spreading consistency. Beat in salt. Makes approximately 3 C. of frosting. Makes a great holiday dessert. Just add “Noel” to its name and decorate each piece with holly fashioned from red and green candied fruit.
