Veggiewiches
Ingredients
8 ounce container soft style cream cheese
3/4 C. carrot; shredded
1/4 C. green pepper; chopped
1/4 C. cucumber; chopped
1/4 C. onion; chopped
1/4 C. celery; sliced
1 Tbsp. lemon juice
1/4 tsp. pepper
8 slice rye or pumpernickel bread
lettuce
Cooking Instructions
In a mixing bowl combine soft style cream cheese, carrot, green pepper, cucumber, onion, celery, lemon juice, and pepper. Chill, if desired. Spread vegetable mixture on half of the rye or pumpernickel bread slices. Top with lettuce and remaining bread slices.
