Vegetarian Italian Dish
Ingredients
1 med. onion, chopped
1 clove garlic, minced
2 Tbsp. olive oil
1 lb. can vegeburger (1 lb. 3 oz.)
2 (8 oz.) cans tomato sauce
1 (6 oz.) cans tomato paste
2 tsp. salt (watch — use cautiously)
1/2 tsp. oregano
1/4 tsp. sweet basil
1/4 tsp. rosemary
2 C. cottage cheese
1 egg, beaten
1 (10 oz.) pkg. lasagna noodles, cooked & drained
1/2 lb. sliced Jack or Mozzarella cheese
1/2 C. grated Parmesan cheese
Cooking Instructions
Saute onion and garlic in oil until soft; add vegeburger (can be purchased at Health Food Store-Raley’s). Add tomato sauce, paste and seasonings. Simmer 15 minutes. Combine cottage cheese, egg and spinach. Pam large baking dish (9 x 15 inches about) and spread alternately, tomato, beef mixture, noodles, sliced cheese and cottage cheese mixture and cover with Parmesan cheese. Bake at 350 degrees for 30 minutes. Serves 6 to 8 generously. (Divide tomato sauce mixture evenly between layers, putting a little on bottom of dish first.)
