Vegetarian Vegetable Soup
Ingredients
2 C. diced potatoes
2 C. mixed vegetables*
1 C. stewed tomatoes
Mrs. Dash’s seasoning salt (to your taste)
Salt to taste
Pepper to taste
1/2 C. diced celery
1/2 C. diced onions (sm. boiling onions are good)
Cooking Instructions
*I buy frozen mixed vegetables, 1 bag is sufficient. I get carrot, cauliflower, broccoli mix. You may add whatever mixture of vegetables you like. Boil until vegetables are done. I also added left over beef gravy for taste or 1 bouillon cube (beef). If you would like to add diced stew meat, brown first then add to vegetables and cook. I bring to boil and turn down to slow boil and cook 1 1/2 to 2 hours. Serve with salad and peas for dessert. Freezes well.
