Vegetarian Chop Suey
Ingredients
1 lg. onion, chopped
1 C. sliced celery
1/2 lb. mushrooms, sliced
2 Tbsp. oil
6 C. bean sprouts, washed & drained
1/4 C. beef, chicken or vegetable broth
1 green pepper, chopped
1 Tbsp. honey
2 Tbsp. soy sauce
Salt to taste
Cooking Instructions
Cook onion, celery and mushrooms in oil in large kettle or wok until tender but not browned. Add bean sprouts and broth. Cook and toss until bean sprouts are tender-crisp. Do not allow vegetables to become soft. Add green pepper, honey, soy sauce and salt; heat thoroughly. Serve with brown rice.
