Vegetablean Chocolate Cake
Ingredients
1/2 C. vegetable oil
1 1/2 to 2 C. thick stewed apples
1 C. sugar
2 C. flour
2 heaped Tbsp. cocoa or carob powder
2 tsp. bicarbonate of soda
1 tsp. allspice
1 tsp. cinnamon
Cooking Instructions
Mix apples with oil. Sift dry ingredients together; add to apple mixture. If mixture is too thick plus dry, gradually add soy milk or water until soft dropping consistency (i.e., pick up a dollop of batter on spoon and give it sharp flick with wrist. It should drop easily back into bowl.) Bake batter in greased floured 8-inch pan or small loaf pan. Bakes in about 20-25 minutes in flat pan, takes about 45-55 minutes in loaf pan. Ready when knife comes out clean. Cool and store in the refrigerator. Best eaten next day. The longer kept, moister and stickier it gets.
