Vegetable Casserole
Ingredients
2 C. carrots cut in strips cooked, drained
2 C. diced celery
1 onion diced
1/4 C. diced green pepper
1 pint tomato juice
4 C. green beans drained
1 tsp. salt
1 dash freshly ground black pepper
3 Tbsp. tapioca
1 Tbsp. sugar
Cooking Instructions
Mix all ingredients together in covered crock pot or casserole. Crock pot: Dot with 2 Tbls. margarine and cook on low for 8 to 10 hours or on high for 4 to 5 hours.
