Vegetable Bake
Ingredients
1 medium head of cauliflower, broken into flowerets
2 C. diced celery
1 1/2 tsp. salt
1 C. boiling water
1/4 C. butter
1/4 C. flour
1/8 tsp. black pepper
1 1/4 C. milk
2 Tbsp. chopped pimentos
1/4 C. finely chopped onion
1 Tbsp. chopped green pepper
1/2 C. grated sharp Cheddar cheese
Cooking Instructions
Preheat the oven to 375°. Place the cauliflower and celery in a saucepan. Add the salt and water. Cover and cook for 12 minutes. Drain vegetables and reserve 3/4 C. liquid. Place the cooked vegetables in a greased 1 1/2 qt. casserole dish. Melt the butter and blend in the flour and pepper. Gradually stir in the reserved vegetable liquid and the milk. Bring to a boil, stirring until mixture thickens. Add the pimentos, onion and green pepper. Pour sauce over vegetables, sprinkle with cheese and bake for 25 minutes. Serves 8.
