Valhrona Chocolate Cake
Ingredients
5 1/2 ounces bittersweet chocolate
1 Tbsp. unsalted butter
3 large eggs
3 large egg yolks
1/4 C. sugar
2 Tbsp. sugar
5 Tbsp. flour
Cooking Instructions
Preheat oven 325. Butter and flour six 6- ounce custard C.. Melt chocolate and butter in double boiler. Stir until smooth. Cool slightly. Using electric mixer, beat eggs, yolks and sugar in bowl until pale and thick, about 10 minutes. Reduce speed. Gradually beat in flour. Add chocolate mixture; beat until thick glossy, about 5 minutes. Divide among prepared C.. Bake until set around edges but center moves slightly when C. is moved, about 12 minutes. Cool slightly. Run sharp knife around edge of C.. Turn out onto plates. Serve warm with ice cream
