Unstuffed Cabbage
Ingredients
2 lbs. green cabbage
1 lb. hamburger
1 egg
1/4 C. raw rice
1/4 tsp. salt
1 (16 oz.) can tomatoes
1 (8 oz.) can tomato sauce
1/4 C. vinegar
3/4 C. brown sugar
2 Tbsp. lemon juice
1 small box raisins (optional)
small whole potatoes
1 1/2 C. water
Cooking Instructions
Cut cabbage in wedges or chunks (not fine as for cole slaw) and place in bottom of large Dutch oven. Mix tomatoes, tomato sauce, vinegar, brown sugar, lemon juice and water together. Cover and cook over medium high heat briefly. Mix hamburger, egg, salt and uncooked rice together and make into meat balls (approximately 18-20). Place on top of cabbage mixture. Cover pot; lower heat and simmer gently for 2 1/2 hours. Add raisins for last 45 minutes. Makes about 10 servings and freezes well.
