Turnips Florentine
Ingredients
1 lb. white turnips (about 4 medium)
boiling water
1/2 tsp. salt
1 tsp. instant minced onion
1 Tbsp. lemon juice
1 Tbsp. butter or margarine
1/2 C. raw spinach, finely chopped
Cooking Instructions
Wash turnips and pare. Cut each into quarters. In 1″ of boiling water in a small saucepan, combine turnips with salt and onion. Cook, covered, for 25 to 30 minutes, or until turnip is tender. Drain turnips well. Mash until smooth. Return mashed turnips to heat. Cook, over low heat, for 1 to 2 minutes to dry out. Add lemon juice, butter, and spinach, mixing well. Serve at once. Serves 4.
