Turkey Soup
Ingredients
1 turkey carcass
3 quarts water
2 cans low sodium chicken broth (10-1/2 oz. each)
1/2 C. uncooked long grain rice
1 medium onion, finely chopped
4 celery ribs, finely chopped
2 carrots, grated
1 bay leaf
1 dash poultry seasoning
pepper, to taste
onion powder, to taste
garlic powder, to taste
Cooking Instructions
Place turkey carcass, water and broth in a large soup kettle. Simmer over low heat for 4 to 5 hours. Remove carcass from stock. Remove any meat and dice skim fat. Return to stock along with rice, onion, celery, carrots, bay leaf and poultry seasoning. Add remaining seasonings. Simmer over medium-low heat until rice is cooked.
