Tomatoes Vinaigrette
Ingredients
1 C. sliced tomatoes (2 medium)
1 C. thinly sliced cucumber (1 medium)
1/2 C. sliced onion
1/4 C. wine vinegar
1/8 tsp. celery seed
1/4 tsp. ground savory
1/4 tsp. ground tarragon
1/4 tsp. crumbled bay leaf
1/8 tsp. pepper
Cooking Instructions
Alternate layers of vegetables in a shallow glass dish. Combine vinegar, herbs and spices. Mix well and pour over vegetables. Cover and chill several hours or overnight. Drain and serve on shredded lettuce. Garnish with 2 tsp. chopped parsley.
