Tomato Fritters
Ingredients
2 C. thick tomato puree
1 1/2 C. fine cracker crumbs
2 Tbsp. sugar
1 Tbsp. flour
1/8 tsp. pepper
3 eggs
3 Tbsp. butter
Cooking Instructions
Mix all ingredients except eggs and butter. Beat eggs well and add to mixture. Heat butter in a skillet and drop in fritters by spoonfuls. Fry to a delicate brown. Makes 4 to 6.
