Tofu Vegetable Soup
Ingredients
2 Tbsp. raw brown rice
2 C. water
3/4 C. carrots, sliced
1 small potato, diced
1/4 C. peas, fresh or frozen
1/2 C. celery, sliced
1/2 C. onions, chopped
tarragon
bay leaf
basil
celery seed
8 oz. tofu, bite-sized pieces
Cooking Instructions
Combine brown rice and water, and cook 15 minutes. Add other ingredients, except tofu. Simmer 10 to 15 minutes longer. Add tofu just prior to serving.
