Thumbprint Cookies
Ingredients
3/4 C. soft margarine
1 Tbsp. plus 3 tsp. artificial sweetener, or 1/4 C. sugar
1 egg
1/2 tsp. vanilla
2 C. flour
1/4 tsp. baking powder
1/2 C. dietetic jam, or sweetened
Cooking Instructions
Cream margarine, sugar or artificial sweetener. Beat in egg and vanilla. Stir in flour and baking powder. Shape into 24 balls 1 inch apart on ungreased cookie sheet. Press thumb in center to make an indentation. Bake 15 minutes at 350 degrees F. Fill depression with 1/2 tsp. jam. Bake another 3 minutes.
