Tangerine Salsa Chicken
Ingredients
2 whole chicken breast halves without skin
1/2 C. flour
1 Tbsp. oregano
1 Tbsp. basil
1 tsp. cayenne pepper
1 tsp. white pepper
1 C. salsa
1 C. white wine
4 Tbsp. garlic oil
2 whole tangerines
Cooking Instructions
Mix together flour, oregano, basil, cayenne and white pepper. Heat garlic oil in heavy skillet. slice chicken breasts into pinky-size strips. Coat chicken in flour mixture and fry in hot oil until golden brown. Remove chicken and discard oil. Deglaze pan with wine and reduce until half. Add Salsa and mix well. Reduce again then add chicken. Just before serving squeeze tangerines into pan and stir and serve.
