Sweet Potato Salad
Ingredients
3 pounds sweet potatoes, cooked, peeled, cubed
1/2 C. finely chopped onion
1 C. chopped green pepper
1-1/2 tsp. salt (optional)
1/4 tsp. pepper
1-1/2 C. light or regular mayonnaise
1 dash hot pepper sauce
Cooking Instructions
Combine first 5 ingredients in a large bowl. Stir in mayonnaise and hot pepper sauce; mix well. Cover and refrigerate at least 1 hour before serving.
