Sunny Citrus Chicken
Ingredients
2 Tbsp. butter
4 boneless, skinless chicken breasts
1/2 C. chicken broth
1/4 C. honey
1/4 C. orange juice concentrate, thawed
1 Tbsp. lemon juice
1 Tbsp. cornstarch
1 tsp. curry powder
salt and pepper, to taste
orange slices
toasted sliced almonds
maraschino cherries
Cooking Instructions
Melt butter and brown chicken breasts in a skillet. Set aside. Mix together chicken broth, honey, orange juice concentrate, lemon juice, cornstarch and curry powder. Pour into skillet and bring to a boil, stir as it thickens. Season with salt and pepper. Return chicken to skillet and simmer about 5 minutes or until chicken is no longer pink inside. Do not overcook. Arrange chicken on platter and spoon sauce over. Garnish with toasted almonds, orange slices and for Maraschino cherries.
