Summer Squash Creole
Ingredients
2 lb. small summer squash
4 bacon slices, diced
1/2 C. chopped green onion
1 tsp. salt
dash pepper
2 medium tomatoes, peeled and cubed
Cooking Instructions
Wash squash. Cut, on the diagonal, into slices 1/2″ thick. In a large skillet, sauté bacon until crisp; remove bacon and reserve. In bacon drippings, sauté green onion until tender, about 3 minutes. Add squash, salt and pepper and toss lightly. Cook, covered, over low heat for about 15 minutes, or just until squash is tender. Add tomatoes and toss to combine. Cook, covered, for 1 minute longer. Turn into a serving dish and sprinkle with bacon. Serves 6.
