Sugar Free Cake
Ingredients
2 C. raisins
2 C. water
2 eggs, lightly beaten, or egg substitute, or egg whites
1 tsp. vanilla extract
1/2 C. skim milk
2 C. unsweetened applesauce
3 tsp. Sweet ‘n Low
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. salt
1 tsp. baking powder
2 C. all purpose flour
1 C. chopped nuts (optional)
Cooking Instructions
Preheat oven to 350 degrees F. Cook raisins in water until all water is absorbed, about 30 minutes. Mix all wet ingredients in one bowl and all dry ingredients in a separate bowl. Add nuts to flour mixture; add flour mixture to liquid mixture. Fold in raisins. Bake in loaf or bundt pan for 35 to 45 minutes, or until toothpick inserted comes out dry.
