Stuffed Tomatoes
Ingredients
10 lg. tomatoes
1 C. rice (Uncle Ben’s Regular)
1 chopped onion
3 cloves chopped garlic
1/4 C. chopped dill
1/4 C. chopped parsley
1/4 C. tomato paste
1/4 C. water
1/2 C. olive oil
2 C. pulp and juice scooped from tomatoes
Salt and pepper to taste
Cooking Instructions
Slice tops from tomatoes and scoop out centers. Discard hard center. Place in baking pan. Mix all ingredients together and spoon into tomato cups. Replace tops. Pour in enough boiling water to cover bottom of pan. Cover and bake at 350 degrees for about 45 minutes, then uncover and bake until brown and done. Delicious vegetarian meal with crusty French or Italian bread, Greek olives, and feta cheese. (Don’t forget the wine!)
