Stuffed Potatoes
Ingredients
3 large baking potatoes
2 Tbsp. butter
salt and pepper to taste
1 C. shredded sharp cheddar cheese
1/2 C. sour cream
2 Tbsp. chopped chives
4 slices bacon, cooked crisp, then crumbled
Cooking Instructions
Preheat the oven to 400ΒΊ. Scrub and prick the potatoes and bake until tender, about 1 hour. Put the butter into a mixing bowl. Cut each potato in half and carefully scoop out the center onto the butter. Reserve potato shells. Mash potatoes well and beat until fluffy. Fold in the cheese, sour cream, chives and bacon bits and pile mixture back into the potato shells. Bake for 15-20 minutes.
