Stir Fried Asparagus With Quinoa
Ingredients
1 C. quinoa
2 C. water
1 pound fresh asparagus, washed, sliced diagonally into 2-inch pieces
2 tsp. olive oil
salt and pepper, to taste
Cooking Instructions
Heat oil in a medium frying pan. Add asparagus, salt and pepper. Stir constantly until asparagus is tender but still somewhat crisp, approximately 5 minutes. Combine quinoa and asparagus, or serve separately, if desired.
