Squash Casserole
Ingredients
3 C. cooked, mashed squash (acorn, butternut, banana or any winter squash)
3 Tbsp. honey, brown sugar replacement, or sugar free syrup
3 Tbsp. whole wheat flour
3/8 tsp. salt (optional)
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1/4 tsp. ginger
3 eggs, separated
Cooking Instructions
Combine squash, honey, flour, salt and spices. Mix well. Stir in egg yolks. Beat egg whites until stiff but not dry. Fold into squash mixture. Pour into 1-1/2 quart casserole dish, which has been sprayed with a nonstick vegetable coating. Bake at 350 degrees F. for 45 minutes, or until crusty.
