Sprouted Wheat Berries Bread
Ingredients
1 3/4 C. bread flour
1 3/8 C. whole wheat flour
3 Tbsp. powdered milk
1 1/2 tsp. salt
1 1/2 Tbsp. canola oil
1 1/2 Tbsp. honey
1 1/8 C. water
2 Tbsp. active dry yeast
3/4 C. sprouted wheat berries
Cooking Instructions
About three days before making the bread, add 1 quart of water to 1/4 C. wheat berries in a large glass container or a sprouting jar. Cover and let the container stand in a dark place overnight. Pour water off through the jar or cheesecloth covering. Add fresh water, swish gently, and pour off again. Repeat twice daily until the sprouts are as long as the berries. For Panasonic 65 or National (1-1/2 pound loaf) (For other machines, adjust and place in pan according to the directions given for your machine): When the wheat berries are sprouted and ready, add all ingredients except the wheat berries to your baking pan. Add the yeast to the dispenser. At the beeper at the end of the first kneading – or in the pause during the first and second halves of the second kneading, add the sprouted wheat berries.
