Spinach Polenta Topping
Ingredients
2 Tbsp. raisins
1 each garlic clove, quartered
1/4 C. olive oil
2 Tbsp. pine nuts
20 ounce fresh spinach, washed, dried and chopped
Cooking Instructions
Soak raisins in hot water until they are plump, about 5 minutes. Drain and set aside. Sauté garlic in oil over medium low heat until garlic begins to brown, about 5 minutes. Remove garlic and discard, reserve flavored oil. Add raisins and pine nuts and sauté until the nuts are golden, 3 minutes. Add spinach and continue to sauté until the spinach has softened, about 5 minutes. Spread over polenta and serve.
