Spinach Orange Salad
Ingredients
Dressing:
2 Tbsp. canola oil
3 Tbsp. orange juice
1 Tbsp. lemon juice
1 tsp. grated orange peel
fresh ground pepper and salt, to taste
Salad:
5 C. torn fresh spinach leaves, washed and dried
1/2 C. mandarin oranges, packed in their own juice, drained
1/2 C. thinly sliced dried apricots
1 small red onion, thinly sliced
1 Tbsp. toasted pine nuts
Cooking Instructions
Whisk all dressing ingredients together; set aside. In a large salad bowl, toss together salad ingredients. Add dressing and toss to coat. Serve immediately.
