Spicy Pumpkin Sheet Cake
Ingredients
4 eggs
1 3/4 C. pumpkin; solid pack (16 ounce can)
1 C. sugar
3/4 C. brown sugar; firmly packed
1 C. oil
2 C. flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt
Cream cheese frosting:
1 packet cream cheese (8-ounce) softened
1/2 C. margarine
1 pound powdered sugar
1 tsp. vanilla
1/2 C. pecans
Cooking Instructions
Beat eggs in large mixer bowl. Add pumpkin, sugars and oil; beat well. Add remaining ingredients except Frosting. Beat until well blended. Spread into greased 15 x 10 x 1 inch jelly roll pan. Bake at 350 degrees for 25 minutes or until toothpick inserted in center comes out clean. Cool. Frost with Cream Cheese Frosting. Cream Cheese Frosting : Cream the cheese and margarine. Add remaining ingredients. Double ingredients if you like a lot of frosting.
