Spicy Pumpkin Butter
Ingredients
1/4 C. dark brown sugar, packed, or Brown Sugar Twin
2 Tbsp. sugar, or sugar substitute equal to 2 Tbsp. sugar
1/4 C. water
1/2 tsp. allspice
1/4 tsp. ginger
1/4 tsp. cloves
1/4 tsp. nutmeg
1/2 tsp. cinnamon
1-1/2 C. pumpkin
Cooking Instructions
Combine the two sugars, water, allspice, ginger, cloves, nutmeg and cinnamon in a 4-C. glass measure. Microwave on high 3 minutes; stir. Add pumpkin and microwave on high 5 minutes. Let cool and refrigerate. Keeps several weeks in refrigerator or can be frozen.
