Spicy Couscous
Ingredients
1/2 tsp. vegetable oil
2 green onions, chopped
2 small tomatoes, chopped
1 C. chicken broth
1 tsp. ground cumin
1 pinch salt
1 tsp. curry powder
1/8 tsp. ground cinnamon
1 C. couscous
2 Tbsp. fresh parsley
Cooking Instructions
In a medium-sized nonstick skillet, heat oil. Add green onions and tomatoes. Saute 3 minutes, stirring. Remove from heat and keep warm. In a warm, medium-sized saucepan, combine remaining ingredients, except parsley. Cover and let stand 5 minutes, until liquid is absorbed. Add tomatoes and green onions; fluff with a fork. Garnish with chopped parsley.
