Spicy Banana Cake
Ingredients
1 1/2 C. sugar
1/2 C. butter or margarine or butter Crisco
1/2 C. oil
3 eggs
3 C. flour, all-purpose
2 tsp. baking soda
1/2 tsp. salt
2 1/2 tsp. cinnamon
3/4 tsp. cloves
3 large bananas mashed (1-1/2 C.)
1/2 C. milk
1 1/2 C. raisins
1 1/2 C. chopped pecans
Cooking Instructions
In mixer bowl, cream together sugar, butter and oil until light and fluffy. Add eggs one at a time, beating well after each addition. Stir together flour, soda, salt, cinnamon and cloves. Combine banana and milk; add to creamed mixture alternately with flour mixture, beating smooth after each addition. Stir in nuts (if desired) and raisins. Turn batter into a greased and floured 10 inch tube pan. Bake 325 for one hour. Cool ten minutes, invert on wire rack and cool.
