Spiced Up Apple Cider Pound Cake
Ingredients
16 Tbsp. butter or margarine
1/2 C. shortening
3 C. sugar
1/2 tsp. baking powder
1/4 tsp. cloves
1 tsp. vanilla
6 large eggs
3 C. flour; unsifted
1/2 tsp. salt
1/2 tsp. allspice
1/2 tsp. nutmeg
1 C. apple cider
1/4 tsp. cinnamon
Caramel glaze
1/2 C. sugar
1/4 tsp. soda
1/4 C. margarine
1/4 C. buttermilk
1/2 Tbsp. corn syrup
1/4 tsp. vanilla
Cooking Instructions
Soften margarine and shortening. Add sugar gradually, beating for 1 minutes. Add egg one at a time, beating 1 1/2 minutes after each egg. Sift together all the dry ingredients and add alternately with the cider and vanilla to the shortening mixture. Blend well and bake in a 10 inch tube pan at 235 for 1 1/2 hours. Caramel glaze: Bring ingredients to a rolling boil over low heat and boil for 10 minutes, stirring occasionally.
