Spiced Lentils
Ingredients
2 C. dark lentils
1 onion, finely chopped
1/2 tsp. turmeric
1 tsp. salt
2 large onions, sliced
2 Tbsp. ghee
2 tomatoes, peeled and chopped
5 garlic cloves, crushed
1 tsp. cumin
1/4 tsp. black pepper
1 tsp. ginger
1/2 tsp. chili pepper
2 Tbsp. cilantro, chopped
Cooking Instructions
Soak lentils for 2 hours in cold water and drain. Simmer them in enough water to cover plus 1 along with the chopped onion, turmeric and salt. Cook for 1 1/2 to 2 hours. Add more water as necessary. When lentils are nearly done, sauté the sliced onion in the ghee in a large skillet. Add remaining ingredients and cook over low heat for 5 to 6 minutes. Stir in the contents of the lentil pot. Add cilantro and simmer for 10 minutes, stirring.
