Sour Cream Walnut Cake
Ingredients
2 C. all-purpose flour
3 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
3 Tbsp. butter or margarine; softened
1 1/8 C. sugar
1 1/2 C. sour cream
2 large eggs
1/4 tsp. black walnut flavoring
Caramel nut frosting
Cooking Instructions
Sift together flour, baking powder, soda and salt; set aside. Cream together the butter and sugar. Add beaten eggs and sour cream. Add flour mixture and mix by hand or electric mixer until well mixed. Pour into 12 x 8 x 2 pan. Bake 40-50 minutes in preheated 350 degree oven. Speedy Caramel Nut Frosting: Melt 1/4 C. butter or margarine in saucepan. Add 1/2 C. firmly packed brown sugar; cook over medium heat for 2 minutes, stirring constantly. Add 1/4 C. light cream; continue stirring and bring to a boil. Remove from heat; blend in 1 1/2 C. confectioners sugar and 1/3 C. chopped nuts; mix well. Add 1/2 tsp. vanilla. If necessary thin with cream a few drops at a time.
