Sour Cream Prune Cake
Ingredients
1 1/2 C. brown sugar
1 C. thick sour cream
1/4 C. cold water
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 C. cake flour
2 eggs, well beaten
1 C. uncooked pitted prunes
2 tsp. baking powder
1 tsp. cinnamon
1 tsp. cloves
1 tsp. nutmeg
Cooking Instructions
Combine eggs, sugar, cream, and water. Mix well. Sift flour, measure 1 1/4 C., and sift with baking powder, baking soda, salt, and spices. Add to first mixture. Beat thoroughly. Add prunes, which have been cut in small pieces and dredged in 1/4 C. of the sifted flour. Pour into well-oiled loaf pan. Bake in moderate oven (375) about 45 minutes.
