Soba Noodles With Black Sesame Seeds
Ingredients
2 Tbsp. dry white wine
2 Tbsp. chicken broth, low fat, low sodium
1/2 C. minced onion
2 cloves garlic, minced
1/2 C. sliced carrots
1/2 C. diced red bell pepper
1 C. chicken broth, low fat, low sodium, divided
2 Tbsp. light soy sauce
1 tsp. sesame oil
2 Tbsp. dry sherry
1 Tbsp. cornstarch, or arrowroot powder
3 C. cooked soba noodles (Japanese buckwheat)
1/2 C. black sesame seeds, toasted
1/2 C. minced green onions
Cooking Instructions
Heat wine and broth in a wok. Add onion and garlic; stir fry 1 minute. Add carrots and bell pepper; stir fry for 2 minutes. Add 1/2 C. broth; bring to a boil. Lower heat. Cover and steam 3 minutes. Combine remaining 1/2 C. broth and soy sauce, oil, sherry, and cornstarch, or arrowroot powder, in measuring C. until cornstarch, or arrowroot powder, is dissolved. Add sauce to the vegetables in the wok. Add soba noodles. Cook until sauce is thickened. Add black sesame seeds. Garnish with minced green onions to serve.
