Skillet Sausage And Peppers
Ingredients
6 oz. turkey sausages, Italian style
5 garlic cloves, minced
1 green pepper, sliced
1 sweet pepper, sliced
1/2 medium onion, chopped
12 oz. red potatoes, sliced 1/4-inch thick
8 oz. stewed tomatoes
Tabasco sauce
1 tsp. olive oil
Cooking Instructions
In a large nonstick skillet, brown sausages until they are firm enough to slice. Remove sausages and slice; set aside. Add oil to skillet and heat over a medium-high flame. Add garlic; fry 10 to 15 seconds. Add vegetables and partly cooked sausage. Fry, stirring, until potato slices begin to brown. Add tomatoes and a few drops of Tabasco. Cover skillet and turn heat to low. Simmer until potatoes are tender, about 15 minutes.
