Silver Plated Pot Roast
Ingredients
4 lbs. blade bone pot roast
3 Tbsp. flour
1 Tbsp. brown sugar
1 tsp. salt
Dash of pepper
1/2 tsp. dry mustard
3/4 C. catsup
1 1/2 Tbsp. Worcestershire sauce
1 Tbsp. vinegar
1 or 2 stalks celery, sliced
1 or 2 carrots, sliced
1 med. onion, sliced
Cooking Instructions
Brown roast slowly on grill over hot coals about 20 to 30 minutes. Season with salt and pepper. Combine next 8 ingredients for sauce. Tear off a 5 foot length of heavy duty foil and fold to double it, spoon half of sauce in center of foil. Place meat on top. Cover with vegetables and remaining sauce. Fold foil over and secure tightly. Have double thickness of foil on grill. Place package of meat on and cook over slow coals 1 1/2 hours to 2 hours. Makes 6 servings.
