Spanish Rice
Ingredients
2 Tbsp. olive oil
1 onion, diced
1 bell pepper, diced
1 1/2 C. water
2 fresh tomatoes, quartered
1 tsp. salt
1/4 tsp. black pepper
1 packet saffron
1 C. uncooked rice
Cooking Instructions
In olive oil, Saute onion and bell pepper. When tender, but not brown, add water, tomatoes, salt, pepper, and saffron, and bring to a boil. Add rice and bring to a boil again. Lower heat, cover, and let cook for 25 to 30 minutes. Halfway through cooking, stir gently with a fork.
