Savory Carrots
Ingredients
12 medium whole fresh carrots
1″ beef or chicken broth
3/4 tsp. salt
2 Tbsp. butter or margarine
1 Tbsp. fresh lemon juice
1/4 tsp. pepper
Cooking Instructions
Wash and pare carrots. Place in a saucepan with 1″ of beef or chicken broth and 1/2 tsp. salt. Cover and cook until tender, about 20 to 25 minutes. Drain. Mix together butter or margarine, lemon juice, remaining 1/4 tsp. salt and pepper. Pour over carrots. Toss lightly. Arrange carrots on a serving dish. Spear a sprig of parsley into the top of each carrot, if desired.
