Hominy And Bean Cakes
Ingredients
bacon drippings
1 Tbsp. flour
1/2 C. milk
1 tsp. salt
1 C. big hominy, ground
1 C. cooked red kidney beans, ground
cayenne pepper to taste
Cooking Instructions
Melt 1 Tbsp. bacon drippings and blend in the flour. Gradually stir in the milk and bring to a boil, stirring. Add the salt. Add the hominy and beans to the sauce and add cayenne to taste (mixture should be hot). Form mixture into cakes. Heat bacon drippings in a heavy skillet and brown the cakes in it on both sides. Serves 4.
