Buttery Grated Carrots
Ingredients
2 lb. carrots
1 Tbsp. salad oil
1/4 tsp. garlic, finely chopped
1/2 tsp. salt
1/8 tsp. pepper
1/4 C. butter
Cooking Instructions
Pare carrots and grate on a medium grater into a large skillet with a tight-fitting cover. Toss with oil, garlic, salt, pepper, and 2 Tbsp. water. Cook, covered, over medium heat, stirring occasionally, for 10 to 12 minutes or until tender. Remove from heat. Toss lightly with butter until carrots are coated. Serves 4.
