Glazed Carrots
Ingredients
3 medium sized carrots, scraped & cut into 1/2″ thick slices
1 Tbsp. butter or margarine
1/3 C. water
1 Tbsp. dark brown sugar
salt & pepper
Cooking Instructions
Put carrots, butter and water into small heavy saucepan. Sprinkle lightly with salt and pepper. Bring to a boil, cover the pan and cook over medium-high heat for 3 minutes. Uncover the pot and raise the heat. Boil until almost all of the liquid has evaporated. Sprinkle the brown sugar over the carrots and cook over low heat, shaking the pan until the carrots are nicely glazed. Serves 2 to 4.
