Shrimp Rockefeller
Ingredients
2 pkgs. frozen, chopped spinach,
squeeze dry
1 lb. shrimp (or more)
1 can cream of shrimp soup
1 C. (4 oz.) Cheddar cheese
3 Tbsp. sherry
Cooking Instructions
Place dry spinach in microwave dish. Top with shrimp. In separate container, place shrimp, cheese, and sherry. Microwave on high 4 minutes, stirring after 2 minutes. Pour over shrimp. Cover with wax paper. Microwave on high 12 to 14 minutes, rotating dish 1/2 turn after 5 minutes. Let stand 5 minutes before serving.
